I’m not a big fan of frosting, so most of these cakes don’t have any! The chocolate pound cake does have a delicious glaze.
 

Very chocolatey !  This uses uncooked eggs, so make sure they are fresh and organic.

You can use canned cranberries for this or some leftover homemade sauce.

  • 2 cups flour
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 stick of butter at room temperature
  • 1 tsp almond extract
  • 1/2 pint sour cream
  • 1 cup whole berry cranberry sauce
  • 1/2 cup chopped almonds

Preheat the oven to 350 degrees. 

Grease a 9 inch round tube pan.  

You’ll need a tart pan for this -- the kind that has removable sides.

This cake can be baked, glazed and frozen.  Freeze it uncovered until the glaze is hard and then wrap it in heavy foil.  Thaw it in the foil before serving.

  • 7 ounces semisweet chocolate, chopped
  • 3 ounces unsweetened chocolate, chopped
  • 2 cups sugar
  • 4 eggs, room temperature
  • 2 tsp vanilla
  • 3 tablespoons brandy or water
  • 2 1/4 cups flour
  • 1/2 tsp salt
  • 1 1/4 cups buttermilk
