Molasses Gingerbread

Once upon a time, these were the gingerbread Santa faces.  They were very cute, but very labor intensive.  If you want to know how to make them, I’ll be happy to tell you. I’ve been rolling them into balls and flattening them with a glass just like the cinnamon cookies. Yummy !

  • 3/4 cup dark molasses
  • 2 sticks butter, cut up
  • 1 cup granulated sugar
  • 1 tablespoon cider vinegar

Heat the molasses almost to a boil (on the stove or in pyrex in the microwave).  Add the butter, sugar and vinegar and stir until the butter melts.  Cool to lukewarm -- then beat in the egg.

In the Kitchen-Aid, stir all the dry ingredients:

  • 5 1/2 cups flour
  • 1/4 tsp salt
  • 1 tsp ground cinnamon
  • 1 tsp ground ginger
  • 1/4 tsp ground cloves

Add the molasses mixture.  Chill if the dough is soft. Form into balls and flatten.  Bake at 350 degrees for 8-10 minutes.
